Ecuador's biodiversity has always been the headline. What's newer (and increasingly relevant for operators) is how that same diversity now shows up on the plate. Each region contributes its own ingredients and techniques, and Quito's culinary scene has become specific enough to build a standalone product around, not just a dinner reservation to slot into an itinerary.

Nuema, recognized among Latin America's 50 Best Restaurants, is the clearest reference point: a research-driven kitchen built around endemic ingredients and seasonal produce, and increasingly a reason clients extend a Quito stopover rather than treat it as a transit night. It's not the only address worth knowing, but it's the one that signals the scene has matured past novelty.

Market-to-table cooking class:‍ ‍One of our standing Quito experiences: a local chef leads guests through a traditional market to select ingredients, then into a kitchen to prepare dishes such as ‘locro quiteño’ and ‘encocado’, finishing with a shared lunch. Half-day format, works well as a soft-arrival activity or a rest-day addition. Not a full-day commitment, easy to place in a multi-region itinerary without disrupting pacing.

Cacao experiences: Ecuador is the world's leading producer of fine-flavor cacao, and hands-on cacao visits (from pod to bar, including roasting and tasting) are one of the more distinctive add-ons we offer outside Quito. These pair naturally with the cooking class for operators building a full culinary day, or stand alone for shorter stops.
